Huaian City in Jiangsu Province is a major crayfish producer.

One farm started up 2 years ago, led mainly by young locals. Their fundraising drive drew investors nationwide.

The farm’s crayfish are prized for their soft shells and firm meat, and they fetch premium prices. They are raised in rice paddies where no agricultural chemicals are used.
